How to make Rasgulla.

Rasgullas (Sweetened cottage cheese)are an Yummy Indian dessert which are easy to make at home too.

Ingredients

Full Fat Milk -1 liter.
Lemon juice-2 to 3 tbsp.
sugar-2 cups.
Water -3 cups.
Cardamom powder a pinch.
Saffron,almond and pistachio for garnishing.
A Muslin cloth.


Method

Pour Milk in a bowl and let it boil.
Once it starts boiling,lower the flame and add the lemon juice.
The milk will now curdle.wait for 2 minutes.
Put off the flame and keep it to warm for some time.
Take a metal container and put a white muslin cloth on it.
Pour the Curdled milk while holding the cloth well.
Hold the cloth together and allow the water to drain completely
Run tap water on the cottage cheese
Squeeze and hang for 30 min.
(The usual place to hang this is on the kitchen sinks tap.)

Then take the cottage cheese in a bowl and knead it for 5 to 7 minutes to make soft dough.
Make small balls out of it.
In a pressure cooker add water,sugar and the cardamom powder.
Allow to boil while stirring.
Once the sugar is dissolved ,add the cheese balls slowly.
Pressure cook for one whistle and simmer for 5 minutes.
Once the pressure goes off,open then lid.
The balls will be doubled in size.
Transfer the Rasguallas to another bowl and keep to cool in the refrigerator.

Serve chilled with grated pistachio,almond and saffron stand.
